Sometimes vegetables can be a little intimidating and I know that I tend to avoid ?weird? vegetables in favour of those I am more familiar with.

After a little research I realised that I wouldn?t have known how to deal with this liquorice-ish plant without some external advice.?Turns out there is a lot that you can do with fennel, you just need to know which part to use.

Focus on the bulb
?

Chop the bulb into wedges for frying, roasting or grilling. You can also thinly slice the bulb and add fresh to salads for some crunchiness. You can use the leaves for garnish and the stalks can be used for stocks.

A simple way to cook fennel is to saute with olive oil. Pictured here is a wholewheat couscous, citrus, olive and lentil dish.

Here are a few ways to cook this sweet and aromatic vegetable:

Saute it
Chop the bulb into wedges and saute with olive oil, oil or butter until golden brown. Add salt and pepper to taste.

Grill it
Slice the bulb like an onion and fry on the braai (barbecue) or griddle pan. They become sweet and smoky.

Roast it
Add to your usual vegetable roast for added flavours. Chop any shape you like.

Soup it
Use the bulb in place of or in addition to onion at the start of your soup-making process.

Stock it
This is the where you can use the stalks! Add to stocks in the same way that you would use celery.

Fresh
Slice the bulb very thinly and add to salads.

You can use the leaves for garnish, although I find their flavour a bit overwhelming.

For recipe inspiration, I found the Huffington Post?s 14 Favourite fennel recipes quite useful. (Not all vegetarian).

The recipe photographed was inspired by this Couscous with Chickpea, Fennel and Citrus recipe.?I substituted ingredients with those I had in my home. Namely lentils in place of chickpeas, pimento olive in place of calamata olives and satsuma juice in place of orange juice. It was an interesting dish, but was a little dry and would have benefitted with the addition of some onion marmalade or chutney.

Gene therapy nears approval in Europe | Health & Fitness

Europe is on the cusp of approving a gene therapy for the first time, in what would be a landmark moment for the field.

Gene therapies alter a patient?s DNA to treat inherited diseases passed from parent to child.

The European Medicines Agency has recommended a therapy for a rare genetic disease which leaves people unable to properly digest fats.

The European Commission will now make the final decision.

The idea of gene therapy is simple: if there is a problem with part of a patient?s genetic code then replace that part of the code.

The reality has not been so easy. In one gene therapy trial a US teenager, Jesse Gelsinger, died, and other patients have developed leukaemia.

There are no gene therapies available outside of a research lab in Europe or the US.

Gene change

The European Medicines Agency?s Committee for Medicinal Products for Human Use has considered the use of Glybera to treat lipoprotein lipase deficiency.

One in a million people have the deficiency. They have damaged copies of a gene which is essential for breaking down fat.

It leads to fat building up in the blood, abdominal pain and life-threatening pancreatitis (inflammation of the pancreas).

The only way to manage the condition is by having a very low-fat diet.

The therapy uses a virus to infect muscle cells with a working copy of the gene.

It was recommended for patients with severe pancreatitis, who cannot control the disease through diet.

?Afraid of a normal meal?

The manufacturer, UniQure, said the decision was a ?major breakthrough? for patients and medicine as a whole.

UniQure chief executive officer Jorn Aldag said: ?Patients with lipoprotein lipase deficiency are afraid of eating a normal meal because it can lead to acute and extremely painful inflammation of the pancreas, often resulting in a visit to intensive care.

?Now, for the first time, a treatment exists for these patients that not only reduces this risk of getting severely sick, but also has a multi-year beneficial effect after just a single injection.

?Restoring the body?s natural ability to break down fat particles in the blood, in order to prevent pancreatitis and excruciating abdominal pain suffered by patients, is what gene therapy is all about: curing disease at the genetic level.?

Dr Tomas Salmonson, from the agency?s Committee, said the use of Glybera should be restricted to patients ?with greatest need?.

China was the first country to officially sanction a gene therapy.

New Annual Highs: Skyworks Solutions, Union Pacific, And US ...

Brushing aside a number of lackluster economic reports -- including data on jobless claims, existing home sales, and a decline in the leading economic index for June -- the major market indexes are modestly higher this afternoon. With help from the tech sector, the bulls are attempting to solidify a third straight win on Wall Street. At last look, the amount of stocks at new annual highs easily outweighs the number of stocks at new lows.

The NYSE has seen 166 securities at new peaks, while the Nasdaq tallies 70 annual highs. Among the equities tagging new peaks are Skyworks Solutions Inc (SWKS), Union Pacific Corporation (UNP), and US Bancorp (USB).

Wall Street applauded Skyworks' fiscal third-quarter results, and sent the shares to a new annual best of $29.75 this morning. The semiconductor issue has turned in quite a performance on the charts, rocketing 78% during 2012, and outpacing the broader S&P 500 Index (SPX) by 12% over the past three months. However, pessimism appears to be alive and well in the options arena, as the equity's Schaeffer's put/call open interest ratio (SOIR) arrives at 1.06, indicating that puts outnumber double calls among options slated to expire within three months. What's more, this ratio ranks in the 96th percentile of its annual range, suggesting that short-term options players have seldom been more put-heavy during the past year.

Following better-than-expected second-quarter earnings, Union Pacific jumped to an all-time high of $123.56. With that, the shares amplified their 22.6% year-to-date return. Despite this strong price action, though, options players look to be bearishly skewed. During the past two weeks, speculators on the International Securities Exchange (ISE), Chicago Board Options Exchange (CBOE), and NASDAQ OMX PHLX (PHLX) have bought to open 1.49 puts for every call. This ratio is in the 72nd percentile of its annual range, signaling that traders on these exchanges have made bearish bets over bullish at a faster pace than usual during the past couple of weeks.

US Bancorp rallied to the $33.99 mark today -- its loftiest price since September 2008 -- on the heels of Wednesday's second-quarter report, and several analyst adjustments. Technically speaking, USB has done quite well for itself, gaining 24.7% since the beginning of the year. Should the bearish brokerage firms reconsider their positions, the stock could extend its overall uptrend. There are 13 "buy" or better endorsements, compared to 12 middling "holds" and one "sell" suggestion. Plus, the average 12-month price target sits at $34.64, which is a slight premium to today's new high.

MILWAUKEE (AP) ? Chef Dan Jacobs expected his recent batch of jalape?o poppers to be tame because peppers grown at this time of the year are generally mild. But he quickly discovered that his spicy appetizer carried an unexpected fire.

"Wow, those things are no joke. They are hot," said Jacobs, the top chef at Roots Restaurant and Cellar in Milwaukee. "At this time of year, they shouldn't be this hot. But the warm weather, the no rain, that's going to cause that."

Temperatures above 100 degrees and droughtlike conditions have baked parts of the upper Midwest for weeks, taking a severe toll on corn and soybeans. But the heat brought an expected benefit for peppers and other crops: Their flavors became unusually concentrated, producing some of the most potent-tasting produce in years.

In peppers, that means the difference between a lightly tingling tongue and heavily watery eyes. The effect comes from alkaloids, the substance that binds to heat receptors on the tongue.

"Peppers really like hot weather," said Irwin Goldman, a horticulture professor at the University of Wisconsin-Madison. "When it's dry and hot outside, you'll get a higher concentration of alkaloids."

The same phenomenon also happens in onions, garlic and certain fruits, he said.

Scientists say a pepper's hotness is generally determined by genetics, although environment can play a role. Long hot days cause peppers to produce more capsaicin, the specific alkaloid that delivers the spicy kick.

The absence of water also has an effect. The higher a vegetable's water content, the larger and juicier it is, but the more diluted the flavor.

Farmers say they've noticed a taste difference in several of their crops over the past month or so. Cindy Chapman, who raises corn, beets and other vegetables, said she noticed that the radishes she harvested earlier in the year were especially flavorful.

"They were much hotter, really sharp," said Chapman, a farmer in East Troy. "Some people won't eat them when they're that sharp, and then there are other people who love the stronger flavor."

This kind of weather can also cause melons to be especially sweet, said Jim Nienhuis, who also teaches horticulture at UW-Madison. Cantaloupes originated in the Middle East, and watermelons came from the deserts of Africa, so they've been thriving.

"Hot, dry conditions result in higher rates of photosynthesis, leading to higher concentrations of fruit sugars," he said in an email.

Bruce Sherman, executive chef at the North Pond Restaurant in Chicago, has noticed. His restaurant gets its fruits and vegetables from farms in Illinois, Indiana, Michigan and Wisconsin, and his recent batches of cantaloupes and cucumbers have been exceptionally sweet.

Sherman said he might use cantaloupe in a melon gazpacho or a cucumber-melon-corn salad.

"We might not dress it as heavily if the integral flavor is better by itself," he said.

He said he hadn't gotten any unusually spicy peppers yet, although one supplier told him that her jalape?os and Serrano peppers were twice as hot as usual.

While fruits and vegetables with lower water concentrations can have a sharpened taste, they'll also generally be less juicy. David Witte, a West Bend farmer, said that could be good or bad.

"One person might like that there's more flavor but less juice, and the person next to him might like a tomato that you cut into and see the juice come out," he said.

The current phenomenon will only last as long as weather in the Midwest remains hot and dry. The heat wave has already moderated in some places, and rain could serve to reduce the flavor concentrations.

Some cooks might take advantage of that brief window to hoard hot peppers for five-alarm chili or extra-spicy salsa. But Jacobs said he didn't plan to offer any special dishes with his fiery jalape?os, grown in Grafton.

If anything, the extra potency means he has to go out of his way to make sure his dishes stay consistent.

"I think we'd just be more careful how we use them in salsa or sauce. We might use one instead of three," he said. "The ones that are super-spicy are no joke. They will rip you apart."

Corn & Crab Salad Recipe

Serves 4

INGREDIENTS

1 whole Dungeness crab

1 leek

2 Spanish onions

1fennel bulb

? cup whole black peppercorns

? bunch flat leaf parsley

4 bay leaves

4 lemons

2 avocados

? teaspoon vegetable oil, plus more as needed

2 ears sweet corn

Salt and freshly ground black pepper, to taste

PREPARATION

1. Boil the crab in a stock of 2 gallons of water, adding the leek, onions, fennel, black peppercorns, parsley, bay leaves, and 3 of the lemons. Once cooked, transfer to an ice bath to let cool completely. Pick out the meat and reserve.

2. Blend 1 of the avocadoes with ? teaspoon vegetable oil, ? teaspoon lemon juice from the remaining lemon, and salt and pepper to taste. Blend to a smooth and creamy texture.

3. Remove the corn kernels from the cobs. Roast the corn in a heavy bottomed skillet on the stovetop with oil, salt, and pepper until deep golden brown.

4. To plate the salad, spread the avocado mousse first. Sprinkle the roasted corn on top. Cut the remaining avocado into large sections and arrange on top with the crabmeat.

The HTC One X is one phone that I hate to put in a case because I love the look and feel. But that's exactly why it needs to be protected.

HTC did an amazing job with the polycarbonate body on the HTC One X. It has a very Nokia Lumia-like texture to it ,and it looks and feels great. However, I need to also remember that this phone stores my life; it has all my contacts, calendar appointments, lots of apps and it wasn’t cheap.

All Blacks star Sonny Bill Williams quits New Zealand for lucrative stint in Japan

"It goes back to pretty much not breaking something that I've told someone that I'd do," he said. "I've chosen my path and now I've got to walk it.

"I knew that I was going overseas next year and they (gave) me an offer and at first I turned it down," he added. "But they came back with an offer that I just pretty much couldn't refuse."

The Japan rugby season starts in September, meaning Williams will play his last rugby matches in New Zealand for the Waikato Chiefs over the final weeks of the Super 15. He will not be considered for selection for the All Blacks team which contests the inaugural four-nation Rugby Championships.

"One day I would love to come back (to New Zealand) but in saying that I'm not going to hold my breath..." Williams said. "To be honest, I feel I've found my place here with the Chiefs, with the boys, but it just goes back to I've given someone my word.

"This was a while ago and I've had to go on with that even though it's tough."

While Williams won the admiration of many All Blacks fans for his athleticism in his 15-test career, he never wholly won their affection. His refusal to sign with the New Zealand Rugby Union for more than a year at a time suggested he was never fully committed to the All Blacks and was leaving himself open to consider other offers.

His insistence on a clause in his contract which allowed him to pursue his nascent professional boxing career while still playing for New Zealand also argued to many fans that he didn't regard the All Blacks jersey with the reverence expected of New Zealand players.

While rugby has been a professional sport in New Zealand since 1995 it has still been driven by a strong amateur ethos. Principles such as the sacrifice of individual reward for the team good have a strong hold on New Zealanders.

Leading New Zealand players have frequently given up lucrative overseas offers for the mere prospect of playing for the All Blacks. In that environment, Williams was seen to represent a player much more focused on financial opportunities than on the perceived honor of playing for the All Blacks.

He was one of the brightest young stars in Australian rugby league from 2004 to 2008 when he walked out on his contract with the Bulldogs to play rugby for the French club Toulon. His sudden and unannounced departure for the famously big-spending French club, reportedly for more than $1 million, earned him a five-year ban from the NRL which will expire at the start of next season.

Williams made it clear during his two years at Toulon, where he was coached by former All Blacks captain Tana Umaga, that he wanted to play for the All Blacks and in 2010 he signed with the New Zealand union. He made his test debut later that year, playing in the All Blacks victories over England, Ireland, Scotland and Wales.

He played for the Canterbury Crusaders in the 2011 Super 15 tournament but transferred this year to the Waikato Chiefs. Williams was to be one of the stars of the New Zealand team which won the Rugby World Cup last year but he made most of his appearances from the reserves bench and played only a few minutes in the tournament's crucial playoff rounds.

His appearance in New Zealand's third test against Ireland late last month was his 15th and likely his last for the All Blacks. It was also possibly his best. He scored two first half tries and he showed he was coming to grips with the finer points of rugby union after a slow transition from rugby league.

His most recent performance for the Chiefs against the Canterbury Crusaders in the Super 15 also showed Williams at his best and worst. He scored a second half try which possibly couldn't have been scored by any other back in world rugby, taking on the defensive line alone and crashing through five tacklers before reaching out for the line.

But in the final seconds of the match, Williams took on the line again and his refusal to pass with two players unmarked outside him possibly cost the Chiefs a try which could have drawn the match.

Williams will continue to play for the Chiefs through the playoffs stages of the Super 15 but will not be considered for selection for the All Blacks team for the inaugural Rugby Championship starting later this month.

All Blacks coach Steve Hansen refused to rule out the possibility Williams would play again for the All Blacks.

"He came to New Zealand rugby two years ago as a convert player (from rugby league) and was similar to Brad Thorn in that regard," Hansen said. "Sonny had high level skills and freakish abilities without a fully developed game.

"This season we have seen the birth of Sonny as a rugby player with his game understanding complementing his array of skills," he added. "His performance in the test series against Ireland showed that he was world class.

Most of Williams' career choices in rugby, rugby league and boxing are seen to have been influenced by his flamboyant manager Khoder Nasser, who also manages Australian professional boxer Anthony Mundine. Like Mundine, Williams is a convert to Islam.
